When the cuckoo clock strikes three times and the afternoon is nearing



Weetbix slice

From the pantry:

Breakfast for dessert base
3 weet bix
1 cup coconut
1 cup caster sugar
1 cup SR flour
2 tbs cocoa
150g butter
2 tsp vanilla essence

Icing on the cake
1 1/2 cup icing sugar
1 tbs cocoa
2 tbs hot water

Aprons on:

1. Preheat oven to 180c and line a tray with bake paper
2. Break bix into crumbs and combine with coconut and sugar in a bowl
3. Sift in flour and cocoa and give a good stirring
4. Melt butter in a saucepan over low heat. Once runny, pour over dry ingredients. 
4.5 Add vanilla and (once more) give a good stirring
5. Spoon mixture into the bake tray, pressing down firm so that it is level
6. Bake for 15 minutes
7. To make the icing, sift the dry ingredients in a bowl. Add the water and give ... (a good stirring)
8. Ice the slice whilst still warm
9. Allow to cool in the refrigerator before cutting into squares
10. Serve with a glass of Mmmmilo!!

  1. I make this slice for my flatmates all the time and they love it. It's so easy!

    I have a recipe from my mum. She used to make it when my sister and I still lived at home, and we'd all have it with a cup of tea while we chatted about school/life/all the things.
